We are heading over to Perth for our Christmas holidays next week. The garden is going to have to fend for itself, other than a little watering from our chook baby sitters. We realised today that our two huge bunches of bananas will likely be too far gone when we return. Last year we cut off a hand or two each week. Unfortunately, this year we will have no such luxury and will have to ripen them all at once. So, by the end of the week I’ll have around 200 ripe bananas!
Luckily we love frozen bananas. I peel them, freeze in containers, and use them in baking or simply slice them and serve as a dessert. Little eco loves sliced frozen bananas.
